Last week the local hunters were out in the valley and today they arrived with a large gift of cinghiale (wild Boar).  The animals roaming wild in this part of Italy were re-introduced some years back with stock from eastern europe.  These animals are larger than the native Italian Cinghiale and most impressive if somewhat intimidating to see.  There is plenty in the parcel to feast on and plenty for the freezer.

This weekend using a good tuscan recipe I will be cooking a fine casserole of rich wild boar with tomatoes, root vegetables and red wine, until then the meat will be marinading in juniper, rosemary and wine….
